Ummm by creator hes referring to the maker of marvel creation. Its supreme being. Eternity is not the creator of anything. He is just the embodiment of the universe. He was created.

The Watchers have the ability to peer into other realities of the multiverse and gain an insight into them. Uatu does this with the What Ifs for example.
Also just being a universal being doesnt mean you cant have insight into other realities or even the multiverse as a whole. Little Genis Vell had omniversal omniscience for example and yet was no major cosmic power.

they 'watch' alternate realities. their 'watch' extends across universes. that makes them multiversal. not in power, perhaps, but certainly in knowledge. it was uatu who told us the story about phoenix ultimately consuming that universe GS mentioned.
do i take it you are unaware of any feats the sword and amulet have accomplished beyond hearsay? 🙁
