They lost to a good Cal team who happens to be ranked #6 in the nation, and they lost to a #4 Florida team. How that translates to being "garbage" is beyond me.

I'm sure LSU will be our toughest opponent this year, but I'm positive we can play with em and slide out with a W.

They only lost by two to Cal, I wouldn't necessarily call that "embarrassed ". Florida is going to blow out a lot of teams so don't down Tennessee.
That 7 wins would probably translate to 9 or 10 wins in any other conference.
