Galactus having DNA isn't an impossiblilty, especially considering the fact that is the past universe, he was a mere humanoid.

Would Thanos collecting the Infinity Gems be considered a plot device as well?

Well it was stated somewhere, that Galactus is a bbeing of energy. It's supposed to be his true form, underneath his armor(or something like). Plus he's an abstract.

I also forgot to mention that Galactus has been turned back into Galan before as well.

Also, I'm just through shit into the wind, but is it theoretically possible that Thanos could hook himself up to his machines, and feed himself with energy for the whole week, and at the start of the battle unleash all his energy upon Darkseid?

Well for one, that story was HAD plot holes, that completely contradicts, New Gods canon. You know, like Doomsday geting there, without a boomtube?
