There's no case for that.

In the end Arthas's quest turns into one for power and control. In that quest he is one of the most successful people ever to live in Azeroth.
So, as a protagonist he's not exactly on a straight and righteous path. But you can't call him unsuccessful. It's just that his goals change ^^
Gary stu is actually a character that steals the spotlight from the protagonist and is often showing greater qualities than the main character. so none of those guys you mentioned are gary stu's at all because they are the main character.
Canon-stu is the one that is being refered to but still those guys you mentioned are capable of failling and don't possese any unrealistic skills than none in his respective universes contain.
Simply put, Gary Stu is a wishfillment character as example of Edward Cullen and Wesley Crusher.

Pointed ears aren't wierd looking, except in Oblivion. They're in a lot of game universes, and actually look cool on Zelda characters. His skin's closer to brown than green now, and the nose while big isn't ridiculous.
