You're right; they're not bad movies. They just destroy what made the first one so deep and mysterious. The second at least had great action scenes that make it worth watching again. As for the third, it really shows nothing we haven't seen before besides the final fight (and I could've sworn the fight between Cloud & Sephiroth in Advent Children was similar to that).

Don't get me wrong, I still love the second and third movie.
Just the first was amazing, and head and shoulders above the sequels 😛
