When Supes comes back and beats DD for no apparent reason other than readers choice and comic sales, you have to ask yourself....why?
I aint a rocket scientist but damn man, please show an explanation of why and how Superman can simply beat someone that he couldn't beat before.
Remember when Lobo took him to school and kicked that ass in a bar fight then all of a sudden the issue was remade and Superman wins LOL cmon man call it what it is.
Superman in the early days couldnt fly but he kicked ass. I disagree with your statement of how he got stronger, back in the day he was ruthless and was feared. now hes a "good" standing citizen and as Lobo said, he fights like a butler.
Let me break it up for you. Pre-Crisis Superman, AKA Silver Age Superman; this dude is the one you are talking about in your last paragraph. Yeah, he wa sso much more stronger then the current Superman and he is even more stronger then the one who fought Doomsday.
This dude used to move planets, toss moons, destroying solar systems for play!! He had the power to move through time just by punching in thin air. Basically, this dude was a beast.
However, after COIE(story), they changed Superman(used an alternative Superman). This dude was weaker and is the one that died in the Death of Superman Arc against Doomsday.
Later on, when Superman comes back, he is upgraded throughout the years. For example: He gets more exposed to the sun, and he gets a defense upgrade against Magic...etc. Get it so far?
As for the issue with Doomsday, this is my theory.
Doomsday evolves from whatever kills him in his previous life. However, he can even evolve during a fight. Now this is my theory which I believe is very good.
Whenever he dies, he becomes immune to the level of whatever killed him. For example: When Superman kills him, used used the power of one Kryptonian. Later on, Superman gets stronger and has the power to kill him because Superman's strength level increased. Another example is how the Kryptonians in the Action Comic killed him. Obviously, they attacked him together so the level was stronger then that of what killed him before.
Now the most important thing to note is that this is comic. The enemies are just villains they are nemesis'. What kind of government wouldn't kill Joker, or any other dangerous villain? Instead they keep locking them back up and soon after, they get out again. That just doesn't make sense, but it comics. They make money by making characters that never die, and if they do die, they usually comes back.
Also, Superman usually fights character but pulls his punches. He doesn't want to hurt them, or worse, kill them. So when he loses the first time, he redeems himself the next time. The perfect examples are the one with Lobo that you said, and Doomsday. In Death Of Superman, Superman fight Doomsday, but doesn't intend on killing him. However, that changes at the last minute where Superman realizes that Doomsday is a monster that doesn't know pain, or fear. So in response Superman uses all his remaining strength to and attempt a vital attack. That's where they both die.
