Common sense tells use you can hold back when somebody is weaker then you why because why would you tax yourself and go all out.
Then we the fact that when Odin goes all out and taxes himself he has too go into the Odinsleep. Go example is the fact that Odin used more power to froge stormbreaker then he did fighting Thanos
Also, I stated the time under a direct blast was much longer with regards to a gungir blast than just regular hand blasting.

There is no wait to time how long Odin was blasting from on panel, however the two handed blast clearly knocks thanos off his fist and show little to no resistence on thanos part.
The gungir blast it shows Thanos walking thru the blast which in theory would have be a longer period of time given that Thanos didn't just fall back from that one.
either way yes thanos has had a upgraded after their battle could he be skyfather level now maybe he was in definitly in the trans/subskyfather range before. However Odin is pretty much the top skyfather imo and i still seen him taking thanos 10/10. Why b/c Odin's biggest mistake against Thanos was underestimating his durability

Thanos has the power now to defeat Odin imo. Odin still wanted to kill him and despite him underestimating him he still failed to even ko an opponent he wanted to kill.
