...Because Jedi vs. Sith, done in 2007, seems to once again state that Palpatine had already died prior to Vader killing him on the Second Death Star.

My question would be...what do we use as absolute canon evidence?

....huh? No, it doesn't. Palpaitne's recording is done after his death on Endor

Leland Chee retconned Palpatine's statements in Dark Empire in his Holocron thread on LFL's official forums. He dismissed the statement as a lie to make Skywalker believe that Vader's actions at Endor were futile.

His recording in the Telos Holocron was done during DE.

Even if it wasn't, don't forget the Holocron gatekeeper can be done from one's own memory. Palpatine said he chose to appear young because he's aware how an elderly master can appear.

And Bane recorded himself as in Orbalisks, too
