As for the battle: it depends greatly o what form Cassandra is in. Poccy was shown to be resistant to TP to a great degree, so i presume it doesn't end in TP rape.
From the other hand, Cassie can analyze his DNA and add his powers to hers, winning the fight... The question is, can she hold for that much time or not?

Since i'm Poccy's fanboy i take him for majority.

Does her telepathy work on people that go intangible?

I'm not sure why it would affect it.

Does it make his consciousness disappear?

I have no idead, but I know that Emma Frost couldn't affect Kitty when she went intangible. And Apoc CAN go intangible physically, but I don't know about his consciousness.

Telepathic attacks come in two forms
Attacking the brain
And attacking the soul.
You can't attack Kitty's brain when intangible because there is no brain there just a construct.
To attack the soul you must enter the Astral Plane and do your thing.

And Apocalypse's soul is pretty messed up.
His BRAIN is now highly evolved by alien tech mixed with his ability to completely morph his physical body.
