Cassandra's also overpowered Shi'Ar anti-telepathy technology with ease... if there's any element of Apoc's brain that is sentient (as is clearly the case), then she can mindrape it.
Apocalypse, on the other hand, can't do anything to her.

He has technopathy + psionic abilities + celestrial tech is pretty good.

Not exactly through "touch", but drawing them in. He sucked in Cyclops' lifeforce via his Optic Blasts, granted, but Optic Blasts are not life energy, and Apoc forcibly extracted his essence, not just his beams. I suppose it's open to interpretation. Also, with the mind-raping, not only does Apocalypse have defenses via his own telepathic powers, but he has a means of creating technological defenses as well to supplement/upgrade said defenses. It's not as simple as "Cassandra's a better telepath, she wins".
