I guess it depends... What tier do you plan to use him in?

I'd opt towards lowering Special Defense as opposed to Defense. More of the moves that'll hit him for Super Effective are physical. Rock, possibly Steel, Fighting. Meanwhile, he should take neutral from most types commonly Special, like Fire, Electric, Grass, Water, and whatnot.

I know this may be a dumb question, but where's the supermarket in this game in which I can buy proteins, irons, carbs, etc.? Couldn't find it anywhere when I looked on the map. Need them for part of maxing out Kyurem's EVs.

Also, what would you say is the minimum level required to beat Cynthia, should I choose to battle her?

I don't know that there is a giant market building in these games. All the shops are more or less in the Pokemon Centers now.

Though in Driftveil City, and possibly one other city, there is a sort of outdoor market area like Slateport in R/S/E. Might have something in there.

Though, you don't need Proteins and stuff to get EVs. You can just fight Pokemans.

Not to mention there is no maxing out the EVs on every stat. Each Pokemon has a total of 510 EVs to put towards stats of your choosing. The highest you can put to a single stat that is still divisible by 4 (4 being the amount needed to add 1 point to a stat) is 252. That means 252 to another stat, with 6 left over, two of which will never really do anything.

I believe those medicinal items stop increasing EVs once they rack them up to 100, and each one gives 10.

The big supermarket is on the route directly before the town with the last gym.

I am getting back into Pokemon to kill some time. Do I have to play the prequel of White & Black 2? Am I missing much?

and another question is, I was inform that White/Black 1 has a long tutorial...

Caught all 5th generation Pokemon and national Dex only 5 away which happen to end at mewtwo being the farthest...
