What "last line of defense" are you talking about? Even if you start without Hogwarts and put those Wizards right on a battlefield, they would still win. They could still teleport their asses away, turn themselves invisible, fly above the enemy forces and utterly destroy them with apparent ease.
Go and watch the latest Potter movie. We see England being turned into some post-apocalyptic land, where exactly nobody is seen after the Death Eaters having gained control over the Ministry of Magic. Harry, Hermione and Ron are shown walking through totally depopulated landscapes. And this is modern day England, not 1940s England.
In the books, the Death Eaters are pretty much running rampant through the land from the beginning of "Half-blood prince" onwards. We see them destroying a bridge in London on screen - by flying around it. In the book, they devastate entire landscapes. Yet we're still talking about a relatively small group of Voldemort followers, which is obviously able to keep an entire country under their boots.
With more than 1000 Hogwarts students and the respective teachers, any conventional military force would get totally curbstomped out of the simple fact that they would be utterly helpless against magic.
