In order to counter a gun kata user dodging left and right, yes, the bullets would need to make a sudden 90 degree turn, like X's did.

Both techniques rely on prediction. The difference is Gun Kata also extensively covers the defensive side of anticipation.

Bullet curving is more dangerous given distance, as the curver has more room to loop the bullets along many different trajectories. At closer range a gun kata practitioner will destroy a bullet curver more often than not, since they'd have less room to spin the bullets against an opponent who can handle a gun like it's an extension of their arm.
