Creative, but I doubt they drain a human completely. And even that wouldn't nearly be enough. Mystique had to inject a very large dose into the guard in X2.
Males of average height have about 4 grams of iron in their body, females about 3.5 grams; children will usually have 3 grams or less. These 3-4 grams are distributed throughout the body in hemoglobin, tissues, muscles, bone marrow, blood proteins, enzymes, ferritin, hemosiderin, and transport in plasma.

I believe they did in the books. Dunno if the movies ever mentioned it tho. Even still the mind raping power the mutants have is way too much to deal with

The vamps absorb the blood they drink I believe quite quickly.
You never see blood pour out of their bodies when they get compromised.
They are solid biological golems.
The only supposed liquid their bodies secrete is a fluid known as "venom".
It's highly flammable.
Plus your iron feat only exists in the comics.
