Except of course we know that bullets harm normal humans as we know the general limits of humans and can apply that logic. No, he knew they'd all die. Gandalf wasn't unkillable and we already saw him die once.
My logic is supported since Gandalf the Grey ran from orcs and it was he who fight the Balrog not the white version.
