His plans changed mid way through but most heroes hit a pitfall and have to come back strong at the end. He was still the leader of this operation despite Quinn "leading". Zan made a decision in the predicament he was in to either wound/kill the dragon as best he could to give Quinn and humanity the best chance to kill this badass of all dragons.

Incorrect. Van Zan did discover at least one thing, the dragon's eyesight 'great in the day, better at night, but weak in the failing light of the sun'. But he didn't listen to his own discovery, since he went hunting for the male in London at night, when it was at its most deadly.
His plans never really changed. He went to London (against Quinn's warning) at night(against his own warning) and got his team mostly killed and the castle ruined. He then went back to London in a smaller group with Quinn leading.
His decision to jump instead of trying for the stairs was silly and plays back to his "uber macho" attitude we saw earlier. He would have served humanity by trying to live and regroup with Quinn and Alex, possibly helping them.
