The strength of the unsullied comes from their intense discipline and cohesiveness as a fighting unit. Being eunuchs however, they are at a disadvantage against full men because they are weaker and thus must rely on a skill. However against a swordsman as skilled as Jamie, Grey worm would be decimated. Daario would be a better candidate.

Jaime is definitely a better swordsman than Gregor.
It doesn't matter when Gregor wears the thickest plate armour in the setting and can wield a greatsword with one hand. Gregor would beat Jaime, if we're using books, lol.
So far in the series the only person who's matched up to Jamie was Eddard. Maybe Syrio if given a proper sword. Then there's always Bronn with his unorthodox style.

Jaqen H'ghar would certainly defeat Jamie. I don't agree with Grey Worm not being able to defeat Jamie as well as being called weak. He did just fine against hordes of men when three of them took the city guard.
So was ****ing Jorah Mormont, who is under normal circumstances a competent, but not particularly outstanding knight. You're comparing them to the in-universe best swordsman in the kingdom. Even Barristan thinks Jaime is the most talented swordsman in Westeros.

In the books Bronn is a borderline non-entity when talking about the best warriors in the setting. In the show he's a bit better, but Jaime is still able to perform well against Bronn with a single hand. His off-hand, mind you.
