Sorry, getting kicked and tossed was not in Oberyn's plans, he's way too much of a pompous man to willingly allow that to happen, especially in front of people he despises. Gregor happened to catch him and Oberyn happened to be lucky enough that Gregor was too slow (and Oberyn is fast) to capitalize on those two moments of momentary vulnerability.
