In some instances red sun doesn't instantly depower Superman. It takes time. So Superman can one shot Grimm well before he is completely depowered.

Because a Red Sun is what usually depowers him without actually hurting him. So he put him in an environment where he was depwowered. There's no need to think so hard over something so simple.
