Zamasu is pretty cool. His motivation seems a little...rushed. I mean he looked at what, one example of humanoids being savages And now he's all "they must all be the same...better kill all creatures that even vaguely resemble humans. " but I like his personality and its cool that a kaioshin is that powerful.

I agree completely.
At this point, anyone that can threaten Goku has to be a universal threat as well.
And if there were so many universal threats running around, then how come none of them showed up until now? Or why doesn't the omni-king just erase them all, so as not to risk the destruction of the multiverse?
They're definitely writing themselves into a bit of a corner here, imo.
SSJ Blue, according to Toriyama the color is to represent a mastery of power and tranquility.
Does that sound like sonething that Vegeta could EVER master? I mean, does the prince LOOK tranquil, or any different from the rage and pride addict he's always been?

Pretty much. Well, he got a head-start on Goku when it came to training with Whis, and then after enough of that, they got teleported to some place that would give them godly ki (similar looking to the RoSaT) after sparring there for awhile, which was how Vegeta went straight to blue.
I agree though that Vegeta probably should've had a different form for your reasons mentioned, but aesthetic-wise, the blue form looks better on him, since it mostly fits with the colors of his outfit, unlike Goku and his orange gi.
