The show simply got better, between the animation, story, and everything, and thus it's received better now as a result. I'm glad it improved, because everything before the Black arc was largely forgettable, with the exception of Goku vs Hit. At least, for me.

I think the reason Zamasu is alive is because the Zamasu we see in the future isn't the Zamasu who was destroyed--that's Black, who still exists because he assumed Son Goku's "identity" and therefore is no longer Zamasu. The Zamasu we see in the future is just the Zamasu of Trunks' timeline, who Black contacted via the time ring. The only inconsistency with this theory is that future Zamasu specified that Goku was *his* prey, even though they should never have met before.
Goku's character seemed more mature overall in Z, but here he's always more child-like, which feels forced as phuck for the sake of cheap comedy. Sometimes it's funny, other times it's cringeful like with the above example. I heard Toriyama didn't have as much control over the writing with Z as he does here, which would explain some of the changes in characters...
