Well the argument is ridiculous. Yes, the quote about command of the force applies to Nihilus. However Nihilus had a pitiful command of the force that was his own, he needed to draw the energy from his surroundings to ever exert his power.
In fact, during his fight with The Exile, he drew on the power of the entire Ravager which contained Visas and hundreds of Sith Commandos, Dark Jedi Masters and Assassins:

And it's pretty obvious that you're trying to nitpick semantics to draw conclusions from the text that are obviously disparate from the intentions of both the author and Meetra as a character. She wasn't trying to obfuscate the particular connotations of "command" and "mastery" when talking about their chances against Vitiate.

She never suggests that, she suggests killing him would be a difficult task and Meetra needs training.
And obviously someone who can devour everyone around him is more of a threat than anything else in the galaxy. Just like Vitiate has posed a far greater threat than Sidious ever has.
