They've both improved, and I don't see why the outcome would be any different.

What we do know is, Mace fought Dooku after he had already invented Vaapad, and he lost to Jedi Dooku, a much weaker iteration of Dooku.

And Dooku overcoming Mace in sparring doesn't preclude the idea of Mace overcoming Dooku in spars as well.
