Unfortunately for you, you also don't have proof that the writer used empty bottles. So again, no proof. Just your theories. You actually have posted nothing that nears being proof, just your opinions. I could easily say that those prop bottles were probably new beer bottles that they got and removed the caps off.

what would you rule his potential hand speed and how do you now view the outcome of the fight knowing that Ip will attack first?

The answer is: I don't care what his hand speed was because it's something that regular humans can do. It's a non factor in this fight because there's no feat of Miyagi using strikes like that in a fight, and even if he did it really isn't that impressive.
