True and not true, since we have instances where people just cannot contend with Jedi at all, but all of a sudden meeting a named Non-Force User they just suddenly forget.
So it's possible that Season 2 of the Mandalorian takes place before the epilogue of Rebels where Sabine and Ahsoka go looking for Ezra and Thrawn:

If that's true then I doubt Ezra will be the Jedi that answers the call of Grogu calling out to the force. That's if Grogu decides to reach out to the force.

I know, it's why I said it depends on if they wanna use they force. If they don't and just rely on skill they could see defeat or at least have to work for it.
Even without the outward use of the force, the precog and reflex-speed granted by the force should net a force-user the win against a non-user nigh every time.
The only non-user beings who should be able to compete are exceptionally powerful droids, augmented humanoids (eg Grieious) and someone who is naturally gifted with superhuman levels of speed, strength and agility.
This is in regards to CQC, ranged fighting changes things some.
Yeah, aside from the Echani who literally made a fighting style specifically to counter Jedi, no one outside of droids and cyborgs should be able to fight them.
Buuuuut if we followed the logic of that, then every fight involving Jedi or Sith against anyone not Jedi or Sith would be over very quickly. It'd be realistic, but boring as hell after a while.
Like imagine the original Clone Wars toon with the Superhero level Jedi like Mace and Yoda and Obi-Wan just wrecking dozens of people all day every day. It would be cool to see, but there would be no drama, no challenge because you'd know for a fact that when a Force User showed up, they would win. period.

Given how writers have written Force Users both on paper and in universe, both currently and prior Canons it's kind of their fault.
But it's not as if there couldn't have been things to have a written Non-Force User vs Force User 1 on 1 battle and make it interesting, even if they weren't augmented or superhuman. But these sorts are few and far between written and even in those cases, it might not make sense.
Though from what I recall, these times of 1 on 1 are few and far between throughout all the material and they are usually fighting on their own level. So you could say these are outliers and most of them end in the Force Users favor anyway.

Will be pretty awesome to see Din and Boba(along with the others) teaming up to track down Grogu.

Regardless of Gideon's probable Force sensitivity(or lack thereof), I still expect him to be immensely skilled.
We saw Elsbeth manage to hold her own against Ahsoka for far longer than she should have been able to(even if you put stock into the hair dresser's claim that she was a former Nightsister.) So I'm confident that Gideon /w/ Darksaber will be considerably above even her.
Great episode, the best of the season so far, heck maybe the best of the whole two seasons. I wonder.. what if it's Gideon the force sensitive who saved Grogu from the temple? And then fell to the dark side?
Btw, before being kidnapped, Grogu managed to end that kind of ritual he was doing, so some Jedi should have felt him. Wonder if something will come out of this by the end of this season
Luke Skywalker should have felt Groku calling out through the Force. Maybe that's how Ahsoka comes back who knows.
One thing I can't get over is why does it seem like Mando hasn't heard of Boba Fett? I can overlook the whole "why didn't Boba just take his armor from Cobb Vanth" but Mando not knowing Boba is hard to swallow.
