i think (1) supes holds back in almost all his fights (2) it seems that supes has also subconsciously locked some of his power (therefore making it very hard for him to fight at his TRUE power potential) this has shown both in comics and movies.I will take the man of steel movie as an example where at the end part of the movie he had to kill zod not bcos that was his intent but bcos zod forced him to.Now i know supes didn't necessarily need some strength blocked by his mind to snap zods neck BUT that just goes to show that he wasnt using his full strength against someone who was hellbent on wiping out earth.Meanwhile zod was literaly fighting with every ounce of energy. Odin and Thanos would rape superman. Superman has fought plenty of characters at full strength and gotten overpowered and beaten. When Hulk was hitting Superman in his chest, and getting ready to overpower superman, only one of them had the ability to get stronger. Supermans strength is set in stone, that's why hulk was going to overpower him.
