OTThe OT suffers from the CGI of the time and the NT just doesn't capture what I feel should be super-powered beings fighting with laser-swords like the PT did, close, but not quite. Though Ep9 shows great promise from the preview.
Obi vs Vader in Ep3 is probably my favorite live-action lightsabre duel.
The promo/story scenes from Star Wars: The Old Republic are what I imagine it should really be and these are about 10 years old now:

I rate the trilogies in the same order as you. I also feel like a high majority if the jedis in the PT would solo rey,kylo and snoke.
They obviously took a conscious decision to try and make the new films similar to the originals with the fights. It mostly hasn't worked though. I think it only really worked with Vader slaughtering the rebels in Rogue One. That looked great when he was chopping them down in part cos his force augmentation looked brutal as he slammed people into bulkheads.

The NT has mediocre duels and lame choreography. I mean, look at Ray and Ken's combat against the Snoke guard.... The fight is a joke.
I think the ROTJ one, at least in part, still holds up. It's a far cry from Kenobi and Vader in ANH.

Anakin and Kenobi vs. Dooku in the first 15 minutes of the movie was awesome. The final duel between Vader and Kenobi on Mustafar has so much built emotion due to Vaders actions by killing the kids/Vader believing Padme brought him just cemented the stakes. It was outstanding and even the Yoda/Sidious duel was awesome.
The ESB duel is hands down the best in the series. TPM is a close second.
