Slow paced sure. But I'd say that's part of the appeal. It's more strategic and less frantic. The actual swings and clashes really aren't any slower then anything in the prequels.

It looks like shit today. I never saw the allure of the esb. The action did not become amazing until the prequels. Anakin and Kenobi vs. Dooku in the first 15 minutes of the movie was awesome. The final duel between Vader and Kenobi on Mustafar has so much built emotion due to Vaders actions by killing the kids/Vader believing Padme brought him just cemented the stakes. It was outstanding and even the Yoda/Sidious duel was awesome.
I like Yoda vs Sidious but am sorta ambivalent on the other two you mention. The Dooku fight is fine, but has little of note. And the Mustafar duel is pretty cool when it's on level ground but gets bogged down by all the extraneous stuff. I wasn't a fan of them swinging around on cables, balancing on beams, climbing towers, etc... The ending also sucked.
