Bazie, we're arguing two different things.
I'm arguing based on history and comic conventions with respect to realism and how power sets tend to typically be used.
You're arguing more based on trying to superimpose a real-world level of realism on to the comics, including the assumption that a power used once could and should be used at any time it is advantageous. I'm not a big fan of these types of arguments; but I grant you that by these standards, Flash likely has many ways to beat Superman, depending on just how much faster one uses the feats to decide Flash is.

But Flash can EFFORTLESSLY do. there's nothing stopping flash from absorbing superman's kinetic energy, period.

Flash can steal X KE, meaning he decreases the KE of the opponent by X. If it doesn't stop them completely, they can just accelerate again. Wally, though, has been shown being able to remove super speed several times, once in a fight with Cheetah and then there with Amazo, for example. Amazo can just copy it again, so it didn't do much there, but Cheetah lost her super speed. The other Flashes can't do that, but have still been shown to be able to bleed off KE from their opponents.
If you're faster than Flash, he can still steal your speed, because speed is a quantity that can be raised or lowered, and unless you have a defense for speed change (as the Juggernaut does) you have no defense against speed steal. This is easy to prove. If anyone ever punches something and their fist doesn't clear that thing with no resistance, then they are vulnerable to things change their speed.
