Is Thor isnt bullet proof to aircraft fire because he evaded them once. Therefore it was the writers intention to show us he could not take those shots.
The counter is unless its specifically shown Thor getting harmed by those bullets, we cant just assume they would harm him.

There is no evidence anywhere that the writer made Thor afraid of something that can not hurt him solely because Thor didn't know whether aircraft bullets can hurt him.
