Although Thor has some portion of the PC and is King of Asgard, Galactus is many many times more powerful as well. The most powerful he has ever been apparently IIRC.
It's like regular Thor one-shotting a fed (Unamped Galactus), which is why it's slightly eyebrow raising.....but we've also seen Mjolnir tear through dimensions and rip apart the Demogorge.

He one-shot Galactus so I would say yes.
The Black Winter could easily consume Universes and did on it's way to 616. Multiple ones apparently. So his ceiling is much higher if he can absorb power I guess.

In a way Superman does amplify the energy he absorbs. His heat vision is much much hotter than a star. The energy from the star allows him to lift more than the star at fraction of the energy. And of course he can fly faster than the light that is emitted by a star. So in a way he does amplify the energy and then shooting it back at the sun to replenish is certainly possible. But thats now how stars work lol so you got a point.
Superman has enough energy inside his body that absorbing the Mageddon anti sunlight, which would have vaporized half the galaxy, didn't depower him. He is also powerful enough to break chains that drag suns massively faster than light across galaxies.
It's not surprising he has the power to act as the Sun for months.
