Carol moving against the missiles, means that, in terms of perspective, the missiles appear to be faster.
As Genii proved, if the missiles take 5s to reach planetary surface, that means that Carol's scene is all happening in less than those 5s of time. Because, the missiles had already been deployed when she reached them.
Yet, the actual scene isn't 5s. The scene is much larger, which means that Carol's reflexes are superhuman (her perception of time is much slower to the human counterpart).
velocity isn't constant; missiles can slow down when entering an atmosphere. And Although time between cut scenes are not always accurate, It doesn't matter how long it takes the missiles to reach the atmosphere, we clearly see the relative velocity of them in comparison to her when they are approaching each other.
Bottomline: She approached the missiles slowly (taking more than 5s to converge when both where shown side to side). And human with flight powers and strength and durability can do the same.
