I know what you mean, the 30-minute window is something I try to hit post-workout. Probably incrementally hurting my gains when I don't. For before a session? Sometimes I like a fasted workout. It....clears my head in a strange way. I try to eat a nice meal and a protein/creatine combo right after a workout but tbh, my urge to eat has almost disappeared.
I've gone an eight-hour drive to NYC from Toronto and just drank water because I couldn't find anything healthy on the way (My boy left my prepacked lunches at his place :/). I didn't realize how tied and addicted we are to food. There is so much freedom in having balanced insulin levels and not needing to feast all the time.
