That's not what was shown. Ozy never had his hand up blocking the path of the barrel before the fire.

That is not what I said, I'll try to explain this even more simply so that you may be able to understand it. By moving your hand in front of where the barrel of a gun is pointing you are in fact putting your hand in the path of the bullet seeing as bullets travel in a straight line.
In other words, you do not have to be able to see a bullet in order to put your hand in front of one. Do you understand my point now or do I have to dumb this down even further for you?

But you have to see the bullet in order to grab it in the air. Otherwise you would just deflect it or get hit by it.
Also you have to see the bullet in order to know when to move your hand out to catch it after it's fired.
With that said, it's further proof of how much easier Ozy can defend against any of their attacks.

The cut scene appears and Bucky just begins to flip. So that means he flipped AFTER the initial bullets missed h.It's aim dodging.

Nobody is questioning the catch, what we are questioning is 1) whether or not Ozy saw the bullet and 2) if Qzy can fight at that speed.
After all, some pitchers can move their arm at over 90mph. do you think that proves they can fight at 90mph?

He's hittable and the person doing the hitting does not have to be faster than a bullet. Deadpool can slice a bullet mid air, and he also gets shot and hit alot.
Its not binary.
You can be capable of keeping up with Flash AND getting tagged by a slow projectile like a gas grenade.
You can run at hundreds of miles per hour, and knock away missiles and still get tagged by slower-moving gamma dogs.
You can have the reaction speed to grab the back end of a speeding train and still get kicked through a glass cabinet by a girl NOT moving as fast as the train, in a one on one scenerio... And...
You can have the ability of perceiving and catching a bullet and still get hit by martial contemporaries.

Of course he saw the bullet. Otherwise he couldn't catch it. He needs to move his hand out to catch the bullet the moment he sees it.
If Ozy can see and react to a bullet from 5-7ft away then he can see their attacks in super slow motion.

3. Characters fight to the best of their ability.
4. Ozy never got struck with a single attack the whole movie, even when fighting two skilled fighters simultaneously.
