I have a question for you guys.
Why during the TOP was full power Jiren able to powerup and start hitting MUI Goku even though MUI is supposed to make Goku unhittable, but Moro (who should be a lot stronger then Jiren) can't even lay a finger on MUI Goku now?
I know Goku's more powerful now, but the difference between the MUI he used in the TOP and the MUI he's using now seems like night and day

Because the difference is night and day.
Goku was already worn out in the ToP, and his inexperience in MUI made him burn energy way faster then normal, as Whis pointed out. Beerus's reaction tells the tale, with him kind of shrugging his shoulders at it in the ToP, and acting highly impressed against Moro.

Histories Strongest Disciple, Hajime no Ippo, JoJo, these are all good fighting based anime. (Especially JoJo, that's some of the best anime you can watch period.)

First off, by the time Goku managed to reach MUI during the ToP, he was completely exhausted(it was mentioned several times during the ToP that his stamina was fully depleted.) That's why he could only sustain MUI for less than a minute in real time before he experienced that wicked backlash and burned out.
Second, Goku is astronomically more powerful now than he was during the ToP. He logically received a significant zenkai after the ToP, and another zenkai after the fight with Broly. In fact, the manga explicitly stated that he came out of those events "stronger than ever":

...Then he trained with Merus and became retardedly more powerful still.
And on that note, the entire purpose of Goku's training with Merus centered around how to perfect UI as a whole. Whis laid some of the breadcrumbs here and there, but Merus essentially completed his training. That's why current Goku can evidently sustain MUI without any backlash.
Of course, it is probably still possible to "out-strong" MUI(that's always been how DB logic works), but Moro...powerful as he is...simply isn't there. Not yet, at least.
