Spock would just punch Logan down to the ground again if he wanted. But he already made his point and remaking the same point would be illogical.
Jokes aside, if we go strictly from power levels, Grundy should wipe the floor with Logan. But from showings, Grundy has been beaten up and down, all over the place.

Wolverine is an anti-brick type of a superhero.
Short, quick, agile... indestructible skeletal structure, healing factor (which can be really overpowered at times, much like Grundy can sodomize Superman and wipe his ass with his face) and weapons that can one-shot anyone without a genuine invulnerability, high regen or other gimmicks such as phasing powers.

It's no different than when any brick punches Wolverine, and he flies off and hits a wall. His HF kicks in, and he gets back up. Same here. They're not even down for a 5 count.

And again - Grundy is getting up WITHOUT his head. Cutting his head off =/= Completely obliterating his head in a single blast with a holy weapon.
Slicing his arms off would do nothing, as they are now capable of tearing Amazo's head off completely independently of Grundy's body.
Grundy could hold him down, the problem is getting to the point of being able to hold him down. Then you mentioned WWH but Hulk was getting sliced TF up during the process, even got stabbed in the eye. Grundy isn't smart enough to do any of that anyways, so it doesn't matter. He gets his head lopped off and then gets chopped in half. Wolverine have the time to do surgery based off your scans.
