She can do a lot. She froze an entire kingdom and started an ice age in under 5 minutes. She also created an entire castle from nothing just because she could. And that's just in the first movie. She's also the strongest of the elemental spirits. If she focused solely on him and wasn't playing around, he'd probably get flash frozen.

Thats not plot induced stupidity. It's just plot. In the book Smaug just had a soft underbelly like most lizards and he didnt have jewels and gold protecting them so he was vulnerable. In the movie he had a scale knocked off and Bard hit the one vulnerable spot he had.
PIS would be something like Star Lord punching Thanos in the face because Gamora was dead even though he knew they needed him asleep to take the infinity gauntlet.

Besides shrugging off being submerged in molten gold (which is the durability feat) and shaking the Lonely mountain, Smaug's fire breath was shown to have reignited massive forges, tends to heat up the surroundings, fill up some larger areas like tunnels or hallways, capable of blowing through the main gate-wall of Erebor within a few seconds and has even left a huge long fiery trail of destruction in his path all the way across the entire Laketown.
