I was kind of thinking the same thing, a little. But I suspect repeat viewings will help with that.

It was cut because it was completely irrelevant to the plot progression of the novel already. It barely can be said to have occurred at all.

Does the jihad really pop of that quickly after Paul reaches the south? Maybe it was the pacing of the film but it feels like the Fremen wasted no time unleashing their wrath in comparison to the ambush raids earlier against the Harkonnen
No. It plays out very differently.
Spoiler:Honestly, the entire movie plays out quite differently but it manages to hit almost all the major plot points and capture the themes very well.
Been awhile since I've read the books but there is no journey south in the books. And the books have a 2 or 3year timeskip.
