After the first few swipes, his claws should get gunked up. And it's not like it'd be coming at him in neat little lines convenient for cutting.. He's cocooned characters near instantly before, so Wolverine will be practically swimming in the stuff..

Please don't use stupid hyperbole. Spiderman is barely any faster than Wolverine. His webbing is not faster than a bullet, its nothing that Wolverine can't react to in a forum fight.
The worst that would happen is a layer of webbing spreads in between the claws. Wolverine's monomolecular edged claws aren't going to be collecting anything, they'll shear right through everytime he attempts to cut at the incoming webbing.

Why can't Wolverine just slash at the webbing as they come?Spiderman isn't fast enough to be invisible to Wolverine's eyes, not even close, and the webbing doesn't come out so fast that Wolverine can't consistently react to it by feats.
As for webbing, non holding back Spider-man within a second sprayed enough webbing to stop a fraction of a tsunami. Wolverine is not dodging nor cutting through it if Pete goes all out. Definitely not cutting fast enough to avoid a tko.
