what is harrys wand made out of(wood,special thing)

Extra info: the Celts assigned trees to different parts of the year and after assigning Harrys wand as holly JK discovered that, entirely by coincidence she had assigned harry the 'correct' wood for his day of birth. SHe therefore decided to give Ron and Hermione Celtic wands to Ron who was born in the February 18 - March 17 period was given an ash wand, (originally beech) whilst Hermione who was born between September 2 and September 29 received a vine wood wand.

I'm rereading the books in preparation of the new book coming out although ill have finished them all way before that but something i noticed and i was wondering if anybody could clear it up before me,
when harry joins Hogwarts he asks nearly headless nick about food nick replies that he hasn't eaten in nearly 400 years, yet in the second book he is celebrating his 500th death day is this a mistake? or what? 😕 🤨
