He's got a lupin bloodline, his physiology was WAY different from any of the other X-Men dating as far back as his 8th appearance.
That said, striking nerve clusters would be enough to put Logan down if Cap can hit enough of them, but that's just it, hitting one isn't going to do the job, nor two or three, it's going to take a lot, and frankly Cap isn't so overskilled beyond Logan that he could get shots in on Logan like that without getting himself skewered. People like to argue that Cap could put Wolverine down with pressure points but they ignore that in order to do that Cap has to fight immaculately. That's not going to happen, they're so roughly close in comparison when it comes to skill that any h2h between these two is going to go hit for hit. When it comes to that, I think Cap goes down far before Wolverine does.
