Sidious may have foresaw Anakin coming his timing was quite good. He may have foresaw Luke beating him but the future is in constant motion and Vader's actions set that future into motion. He killed Sidious. Maybe Sidious saw Luke striking him down and knew that could open up to Luke to the dark side and since the emperor was a clone anyways he could just come back in another one and with Luke having struck him down he thought he would make a great apprentice.
