Doesn't telepathic abilities include the ability to know what an opponent is thinking before they physically act, and launch an attack? Why would Thanos be excluded from being able to do this? Now let's argue that this has never been seen on panel, but ignore that Thanos has reacted to light speed bull rushes, and attempted blitzes on panel. Let's also ignore Gladiator. and any other speedy character ever being hit by less than an equally speedy character on panel. You can't just cherry pick one instance, but then deny another.
We don't know if Thanos can do this since he never did this in a comic. And Gladiator's mind would work faster than Thanos mind anyway. Thanos wouldn't be able to read Gladiator's mind before Gladiator acts. It's like trying to read a book when someone is turning the pages faster than you can read the words.
But the biggest problem is that even if Thanos could read Gladiator's mind fast enough then he still couldn't defend against since because of the speed deficit. Remember Gladiator isn't a dumb bullet. He will see Thanos in slow motion reacting to his movement or thoughts and change or alter his action accordingly. In other words, if Gladiator can move 5ft before Thanos moves 1in then there is basically nothing Thanos can do really.
