My favorite thing is very easy too. Cook some rice, cook some broccoli, mix them together with a can of cream of mushroom soup and shredded cheddar cheese. Takes maybe 15 minutes to cook (depends on how long it takes the water to boil to make the rice) and it's really good.
I also make really good lemon-mustard chicken, which is probably the ultimate "make it up as I go along" recipe of mine, as the spices I use, and how much lemon and mustard just depends on what I have a mood for and what's on hand 😊

It's really good grilled.
I take those gallon freezer bags, and mix together a bit of water, lemon juice, mustard (whatever kind you want), salt, pepper, garlic, and any other spices I feel like using, and then marinate the chicken in it for about a half hour and then cook it. If you bake it in the oven, I usually pour the remaining marinade in the pan. The amounts just depend on how strong you want that particular flavor to be.
My mom taught me how to make it when I was a kid, but I make it better than she does 😛
