Overall its possible.
I think Fist may be more trained in multiple forms of martial arts while Shang is mostly trained in kung-fu and has some knowledge of other forms of martial arts. That however wouldnt/doesnt take away from Shangs fighting ability.
Thats just my opinion personally. I just think Fist has a broader range. I can be swayed in my opinion though.

I'm pretty sure it works like Panthers suit.
Phasing screws up anything technological , so yes it's actually feasible.
Sentry is POSSIBLY vulnerable to psychic attacks. Though he seems more vulnerable to emotional ones. IE : confusion , doubt, guilt. Bring these up and he should crumble like house of cards.

Yup. Actually just talking down to him in theory could have the same effect. Supposedly there was a scene in CW 7 that was taken out that had Cap talking to Sentry and reducing him to a quivering puddle.

The Sentry is supposed to have immense raw psionic power. But even so, Mastermind mind f*cked him over and made the Sentry telepathically erase his existence from everyones mind on Earth. However you have to remember that Wynagarde also managed to drive the PF insane. Masterminds powers in New Avengers was said to work better on powerful minds.
On another note Emma managed to move around in the Sentry's mind and bring Lindas mind into his, even though he was doing everything he could to resist her help. Eventually once she discovered the problem she managed to reverse Masterminds damage.(Because as White Queen she learnt how his powers work better then he did. That's how she escaped that coma he placed her in in UXM #169)
So anyway, being a telepath himself he could put up some resistance. But he hasn't trained himself to do so. So while he may have immense psionic power he lacks the skills to properly defend against them. Well that's what so far has been alluded.
