She never said that Harry and Hermoine wouldn't hook up because all she did was play along with the interviewers who feel the same way as you do. JK Rowling would not purposefully reveal any information on Book 7, not even when it involves whomever hooks up with Hermoine.

On that quote of yours, I'd put the emphasis on the now part if I were you because since JK Rowling mention that 2 characters will die in Book 7, there's a 99% chance that neither R/HR nor H/HR will happen so the Ron/Hermoine shippers are just as screwed as the Harry/Hermoine shippers.
