Because in the commentary for movie 1..Johnny found it very "interesting" that Will was the first person to actually KILL anyone on screen in PotC...and he actualy killed a man without really caring because in his mind, by that point "he hates pirates"..so what happens if "he hates Jack" or "he hates Liz"??.It shows us that if this man hates someone or something SO much..he doesnt really care who he hurts..He almsot killed jack in movie 1 without giving him a chance..

Katelovespirate..I think that eating thing might be a big hint..he only ever has like one set goal on his mind all the time..and its so damn important he doesn't have time for other pleasures in life..it never alternates between 2 things with him both Liz and Jack have many different things/goals on their mind in his movie..and it switches back and fourth...and then Will although he knows Liz has escaped etc..his dad is still very much number 1.IMO Will not eating shows how intense and scarily focused he is when he has something on his mind that he wants to achieve he doesn't ever give himself time to just be happy and have pleasures (we see Jack/Liz do it ALL the time)..he's TOO serious..he NEVER laughs EVER in any of the movies..its usually a tiny smirk..to be too set on a goal only makes it all the more harder for your heart when you don't achieve it.....EEEEEEKK!

The reason is simple, Kate. Will is a vampire, or to be more specific, a daywalker, kind of like Blade. Will cannot eat or drink human food because he will vomit it up, preferring human blood which he always craves. Hence his foul mood most of the time. We don't usually see him at night, do we? This is when he stalks the people of Port Royal and drains them like Jack can drain a bottle of rum (or a whore). The reason he can never be with Liz is because she is a creature of light, a human who enjoys human pleasures. They are doomed to be apart forever.
Notice how Will thrives when the sun is behind clouds, like on the Flying Dutchman, or in the cave fighting Barbosa and his crew. But in the sun? He's completely retarded. That's common of a daywalker. They can survive, but only to an extent. He would have won that swordfight against Norrington hands down had the sun been hidden. But no, it lingered on and they lost the heart.
