Thing takes Cap 8/10. Cap can propably roll with some punches, but it's quite hopeless.. Thing will make him Captain France.

Ultimate Cap is FARE MORE durable than his 616 counterpart.

I think the reason cap'll win is because cap knows how to expose his enemy's weakness, in the latest civil war issue, cap fought spiderman, and although spiderman is far superior in strenght and speed, cap knew what it took to beat him, he kept spidey in close and kept punchin him where as all spiderman could do was put a scratch on caps face. Also in his fight with wolverine, he messed up wolverine's tendons so he counldt pull his claws out but wolverinewas 2 step ahead, and had cut injured caps leg to mess up cap pretty badly

Sounds about right. I'll give this match 5/10. Captain America has been shown as an expert in the uses of pressure points, even in insanely durable beings (the Hulk, anyone?), and the Thing has shown to be susceptible to said pressure points (Gamora).
Steve could also dodge the Thing all day long, when you look at his track record against people like Spiderman and his ilk.
The Thing, however, would splatter Captain America all over his fist, assuming he did manage a lucky strike. One that wasn't blocked by Captain America's shield. Or dodged, for that matter.
Hmmm...maybe I'm being to generous to the Thing.

Most everything you've stated in your post is correct but...
Cap had subdued (beaten) Wolverine and was taking him back when they were engaged and then Wolverine cheap shotted Cap and then Wolverine ran away.
Cap has to get in close to attempt to do any damage and even then he can't do any thing serious to Ben... However even a glancing blow by Ben can KO Cap and Cap isn't too fast for Ben to hit BTW. Is Cap faster than Spiderman, Namor, Black Bolt, Silver Surfer...NOT.
