His knowledge was prior to the point where the timelines split, is what I was saying. He didn't learn his combat abilities during the seven years lost, in fact NPC chatter during the game pretty much says that things sucked ever since Ganondorf took power.
It's the same Ganondorf, except for experiences that didn't change his powers in any way.
