The two characters are barely comparable. Altair was an assassin from the start - it's what he always trained to do. Ezio was a spoiled rich boy who only started to train as an assassin after his family was killed. So of course Altair was far more business-like and less hotheaded than Ezio. That's the entire point. They are not meant to be alike at all.
That's really not true. They are meant to be alike. They have limited differences. I'd also like to add that both are rebellious and broke several rules they were not supposed to. They also look alike, dress alike, and kill alike. Hell, they both overcome frustration issues they had at the beginning of their games and become more professional.
How are they "barely comparable?"
